These protein peanut caramel bars take the classic chocolate and peanut butter bar and rebuild it from real, recognisable ingredients. A lightly baked almond flour and grain-free granola base sits under a rich peanut butter middle, all finished with a chocolate coating and a scattering of our Protein Boost granola for extra crunch. No refined sugar syrups or ultra-processed fillers, just proper ingredients that come together to make your new favourite indulgent sweet treat.

Ingredients
Base
- 1 cup almond flour
- 1 cup Paleo Protein Boost grain-free granola
- 1/3 cup drippy peanut butter
- 2 tbsp coconut oil
- Pinch of salt
Middle
- 3/4 cup peanut butter
- 1/2 cup coconut oil
- 2-3 tbsp maple syrup
- 1 tsp vanilla
Top
- 150g chocolate
- 1 tbsp coconut oil
- Paleo Foods Co Protein Boost granola, for sprinkling
Method
1. Bake the base. Preheat the oven to 170°C. Combine the base ingredients and press firmly into a square baking dish lined with baking paper. Bake for 6 to 9 minutes, until slightly golden.
2. Make the middle layer. Allow the base to cool completely. Mix together the peanut butter, coconut oil, maple syrup and vanilla, then pour over the cooled base. Set in the fridge for 4 hours or overnight.
3. Cut and coat. Cut into bars. Melt the chocolate with the coconut oil, then dip each bar into the chocolate and place onto a fresh sheet of baking paper.
4. Finish and store. Sprinkle each bar with Protein Boost granola while the chocolate is still soft. Store in the fridge so they stay firm.
Tips for the best results
- Press the base down firmly and evenly before baking, so it holds together well once cut into bars.
- Make sure the base has fully cooled before adding the middle layer, otherwise it will melt into the peanut butter mixture rather than setting as a distinct layer.
- Work quickly when dipping the bars in chocolate and sprinkle the granola on immediately so it sticks before the coating sets.
