Ingredients
3 Boiled Baby Potatoes (fork tender)
Plain Yogurt
Fresh Avocado & Cherry Tomatoes
Fresh Parsley
Paleo Granola of choice
Method
Preheat your waffle maker and brush a little oil onto the plates
Add your 3 boiled baby potatoes and close the waffle maker firmly to smash them into a single, waffle shape
Let it cook for 3-5 minutes until crispy
Carefully remove your waffle and rest it on a plate.
Add your toppings of yoghurt, fresh avocado & cherry tomatoes, fresh parsley and a generous sprinkle of Paleo granola
